Spicy Shrimp Pita

We all crave those super quick comfort foods that are healthy but don’t lack in flavour and this Spicy Shrimp Pita recipe delivers on it all! This wrap comes together in no time and is full of delicious spicy, tangy flavours that will keep you craving it again and again; not to mention that it’s full of good-for-you veggies which is always a plus!

So stop compromising healthy for flavour and get stuck in to this Spicy Shrimp Pita that will not disappoint!

The Recipe

Take your time with this recipe if you need but I believe you can bang this out in 10 to 15 minutes if you’re ambitious!

Ingredients

  • 1 Whole grain Greek pita

  • 5 to 6 Large Shrimp Fully peeled and cleaned

  • 2 heaping tsp Calabrian Bomba chili paste

  • 1 tsp capers slightly crushed

  • half a zucchini thinly sliced into ribbons and lightly coated in olive oil

  • 5 to 7 cherry tomatoes

  • 1 handful of your favourite salad greens

  • 1 heaped teaspoon of roasted garlic hummus

  • 1 pinch of Kosher salt

  • Shaved Parmesan Cheese to taste

Directions

  1. Preheat a grill pan to a high heat (get the oven fan on for this one)

  2. Toast each side of the pita on the grill pan until desired toast then remove

  3. In a small bowl, mix together shrimp, bomba chili, and capers then place on grill along with tomatoes and zucchini. Cook the shrimp for about 2 minutes on each side and cook the veggies until grill marks form on each side.

  4. In the centre of your pita spread the hummus and chili paste.

  5. Layer on zucchini, salad, blistered tomatoes, shrimp and parmesan cheese shavings.

  6. Fold the wrap in half and enjoy!

Bonus Tip!!!

  • The Shrimp will continue to cook once taken off the heat so don’t Stress too much about the cook.

  • When tomatoes char, they develop a sweet tangy flavour that will act as a sauce on any dish.
