Easy Bruschetta Recipe

Here in North America, we love bruschetta! That fresh and zesty tomato topping that pairs so well with toast. What most people don’t know is that bruschetta is the name for a antipasto that consists of a slice of grilled bread with any variety of toppings. It could even be the combination of grilled cherries, goat cheese and sherry vinegar without that beloved tomato topping we all love.

Putting all of that aside and for ease of this recipe, lets keep calling that tomato topping bruschetta and make one you’ll never forget with a few tips and tricks to get more out of it!

The Recipe

This Recipe is very straight forward and it really comes down to buying the best ingredients your budget can afford. The best tomatoes will get you closer to the best bruschetta!

Ingredients

  • 2 cups cherry tomatoes, chopped

  • 1 Green onion, sliced

  • 1 clove of garlic, minced

  • 3 tsp red or white wine vinegar

  • 1 + 1/2 tsp good quality balsamic vinegar

  • 3 Tbsp olive oil

  • 1 to 2 pinches of Kosher salt (to taste)

Directions

  1. In a bowl, add green onions, garlic and 1 tsp of salt then mix gently with your hands.

  2. Add tomatoes, vinegar and basil into the bowl.

  3. Mix with hands while gently squeezing the mixture.

  4. Add olive oil and remaining salt, to taste.

  5. The Bruschetta is ready to enjoy at this point but time in the fridge will allow the flavours to get even better!

Bonus Tip!!!

  • Strain excess liquid of the bruschetta into a separate bowl with a sieve or strainer and set aside to use as a delicious tomato vinaigrette at a later time. It pairs amazingly with any salad!

  • Toss the bruschetta in with some pasta for a quick and easy meal with a punch of flavour.

  • Makes a great accompanying flavour to steamed mussels.

  • Bruschetta mixture will keep in the refrigerator for approximately 5-8 days.
